Food for Thought

Hi everyone.  I'm sure I'm not the only person who stumbles upon easy recipes...and heads to the supermarket after work to hunt down the ingredients... Yumm!!   Most likely this will be dinner one day in the very near future... Looks so simple and delish... Looking forward to giving it a try!  






Ingredients:
10 ounces dry pasta
2 cups cooked chicken-cubed or shredded
1 cup chopped fresh spinach
2 tablespoons butter
½ onion, chopped
2 cloves garlic, minced
4 ounces chive and onion cream cheese
1 cup sour cream
1 cup whole milk, heavy cream or half-and-half
½ cup shredded or grated Parmesan cheese
2 cups shredded mozzarella cheese
½ cup fresh tomatoes- cubed
Fresh basil or parsley
½ teaspoon salt
½ teaspoon black pepper
Method:
Cook pasta to al dente and set aside. Heat oil and sauté onion and garlic until soften, then add cream cheese and stir. Add parmesan cheese, sour cream, milk, half of the mozzarella and spices. Set aside. Combine chicken pieces with pasta, spinach and tomatoes and mix in the prepared sauce, stirring until coated. Transfer mixture into a greased casserole dish, top with the remaining mozzarella and bake for 25 minutes, at 400 degrees F. Garnish with fresh basil and serve!
